This was a wing it recipe that I concocted it came out sooo moist and the kids and there friends loved it. Basically I tweeked the diet cake with soda recipe...its quick and can be thrown together in a snap.

1 boxed cake (I used Duncan Hines French Vanilla)
1 tsp Vanilla extract
2 tsp Coconut Extract
1 Can Lite Coconut Milk ( I used A Taste of Thai brand)
4oz Lemon Lime Seltzer
2 cups toasted sweetened Coconut

Lay Coconut Shreds on baking sheet toast in oven let cool..be sure not to burn.
Mix all other ingredient together in a bowl add 1 cup toasted coconut. Bake cupcakes according to Box instruction...Allow to cool Frost cupcakes with Vanilla frosting. I use Vanilla frosting 2 tsp Coconut Extract mix well then dip frosted cupcaked in left over toasted Coconut.

Not gourmet but thumbs of from a tribe of kids!
