Ginger,
I'd like to use your Blue Cheese Dressing recipe as a spread for crackers. Would adding less buttermilk make it the right consistency?

Never thought of using it as a spread but it should work fine using less buttermilk. Post how you liked it (or not, LOL) that way.

You could try using powdered buttermilk for part of the amount instead of liquid...that way you'll still have the nice buttermilk flavor without thinning it too much.
