IPE finish on outdoor table

I just made a 42" round table out of left over IPE from my deck project and I am at the finishing stage. The IPE is 3/4" thick (9 boards were glued), sanded and ready for finish.

The table will be on the deck, but under a roof as that portion of my deck is covered. It will get some morning sun from an angle, but no direct sun.

Goals is to not have any or cut down on fade from UV light, and to have no water marks on table top from cocktails :). The water marks rate first in the process as I do not want to baby the table on the deck but would like to keep the good looking wood color and grain.

I tested a piece with wax and oil finish (same as my deck), and both show water rings from glasses. Can I use a spar varnish or laquer for a table top without worrying about peeling? If so, do I get any uv protection?

Any ideas or experience would be helpful!
