That's exactly what I recommend to clients that want silver Ipe. Seal it once, and forget it. I use Penofin.

you can leave it unfinished just make certain to seal the ends so it does not crack and check

end cuts require a product called "anchor seal"

One coat of penofin makes the deck look good on my website.
It's also good to flood it on the fresh end cuts...where it will get absorbed. I don't recommend anchor seal. When the Ipe heats up, the anchor seal melts, and will migrate to the top of the deck...and look bad.
