After shell has cured, what prep work is done before plaster?

It seems like there are many rough areas in the shell, which isn't surprising. I'm just wondering if those are smoothed out before plaster is applied. If so, how is this done?

Gunite is rough, the plaster is like the icing on the cake, no pun intended, it fills in, seals the shell and makes it smooth.

It also likes a rough surface for the sake of adhesion.
