glass waterline tile questions

At long last construction on our pool has begun. I have selected irridescent light blue glass tile (subway pattern) for the waterline. The installation specs say that the grout needs to cure a minimum of 21 days before submersing. My pool contractor is not happy about this. How critical is this wait time? I am in southern oregon and our weather now is beautiful 80 -90 with no humidity. Any chance of a shorter cure???

Manufacturers want to cover their bases in all aspects.
I have installed grout and added water in less than a week without problems. Also, no one doing repairs of grout would leave it for 21 days to cure!
