What is stone sub-base for?

This pool build is exhausting and we have not even begun yet.

I thought that a crushed stone sub-base was standard in construction of a gunite pool. One of the pool builders that we have gotten a quote from (the one we are leaning towards) did not understand what I was asking for when I had crushed stone sub-base in my specs. He said he has not seen that done before. That is very confusing to me. Every web site I look at about the gunite construction process says they put a crushed stone sub-base in the excavation before laying rebar and plumbing. This PB uses dry mix gunite.

What is the crushed stone for? And is it important to have? Should I be concerned about a pool builder that does not use it and has not seen it done that way? I have never built a pool in my life but I have see it done that way in almost every picture posted on here!!!
