I think you mean plaster repair when you say gunite. Sounds like your pool was replastered at some point and you are seeing the delamination between the old surfaces.
I see a replaster in your future!

Plaster? It looks like the top surface (about 1/4") is a concrete material. Lots of crystal type chunks in it. It's grey in color too. Isn't plaster white? Also, when the sun is shining there are sparkles all over the surface.

Could be color plaster. Sparkles are probably sand that is in the mix.
Pigment is often added to the white sand and cement for color.
