Poured concrete coping

Question for all of you pool and concrete experts: We would really like to use poured concrete coping, BUT would like to keep the thickness to 2 to 2 1/2". Is there a way to do this? The concrete people we've talked to like to pour 3 to 4" thick.

That would be to thin and your concrete would crack. 3.5" would be a minimum.
