Gunite question?

If it's shot at around 65 degrees, and not sunny, do you still have to water it for 7 days?

Air draws the moisture out. The moisture is needed for the chemical reactions taking place. Failing to wet it down will result in the moisture further in the concrete to be drawn to towards the surface, weakening the entire concrete thickness.
