Pool Build in Austin

We chose Majestic Poolscapes to build our pool. Here is the design drawing (two views of the pool). This pool will be 41x20. They came to spray the outline today, city permit is scheduled for tomorrow and the digging should begin by the end of the week. Does anyone have any recommendations on pebble versus plaster?
