Fieldstone Wall and coping

We are discussing some options with our builder and he showed some pictures of upper walls and coping constructed with Fieldstone. We liked the look and are now considering going with this option for our pool. The builder says he can even make it weep (kind of like a waterfall).

My only concern is that the open construction with gaps, etc would attract dirt and algae. Does anyone have experience with filedstone? Thanks.
