Pool Deck/replastering

We are going to have our pool replastered soon - what is the best type to go with - is fancy better? We are also looking to add sitting areas around the pool for more surface seating areas - is there a trick to connecting the cool crete to the flagstone that we wont to install? If our cantilever deck is in good shape would anyone suggest adding a rim around the edge of the pool (dont know the technical term) of the same flagstone that we will use in the sitting areas?
