Rural home; Geothermal system; How to heat water?

Here's the setup:

We're going to build a house next summer on our farm. We plan to have a geothermal system installed for the heating/cooling, supplemented by a wood stove.

When it comes to water heating, as I see it, I have a few choices:

Go with the Geothermal system with desuperheater and a conventional water heater. This would mean either going with an electric water heater, or going to the trouble of setting up propane. Neither sounds great.

Skip the desuperheater route, and go with tankless electric heaters. The house will be in Oklahoma, so the desuperheater would provide the hot water in the summer, not much in spring, fall, some in winter.

I'm leaning toward the tankless heaters. The kitchen and master bath are back to back, would one tankless get both?
