Bathroom sink faucet question

I bought a bathroom vanity with a sink included, which requires an 8" center set faucet. The problem is that I really, really prefer faucets with one lever (so much more convenient) rather than 2 handles, and there are only one or 2 that are 8" center set, and they are really meant for commercial use. At FaucetDirect there are drawings rather than photos, and I can't really picture what they look like.

Is it possible to get caps for the 2 extra holes, and use a single lever faucet? I have seen kitchen faucets with a sort of adaptor arrangement (I don't know what you call it) that covers up excess holes, but I have never seen this for bath faucets.
