Reroute PVC drain for new sink

I will soon be having new granite counter tops with a undermount "D" sink and rear drain installed. I called a plumber who wanted $350 to redo the drain. I am handy but have not done work with PVC yet.

See attached photo of existing install. I am looking for guidance on the procedure to cut the existing PVC and make up a new connection to the new sink drain in the rear of the new sink. Sink is 9" vs 7" deep so I will have to shorten the copper with the DW outlet

As always, I am looking forward to some great advise from a great forum.
