Working around wire lath

I have a three-stem bath/shower valve assembly that I need to replace. It appears to be held in place with some blobs of cement or whatever is applied to the wire-lath. What is the proper procedure for replacement of this kind of assembly in this kind of wall? I suppose that I have to carefully chip out the material and then replace it when the new valve assembly is in place. Please confirm this or tell me what else can be done.
