Double Bowl to single bowl kitchen sink

We are having new countertops installed and will be putting in an undermount stainless single bowl kitchen sink. It will replace a double bowl sink that has a garbage disposal. Obviously it will have to be replumbed - anyone have a diagram for a single bowl or suggestions?

It will be less complicated than the double-bowl setup. Check your local library in the self-help section. They should have several homeowner repair books with good illustrations and descriptions.
