Over sizing Water Softener

Hello, my wife and I purchased recently purchased a home with really hard water. It's 1600sq with two bathrooms (our second bath almost never gets used). It's only the two of us at the moment, however, we plan on having kids in the near future. Regarding water softener size, is it possible to oversize? Ideally I'd like a unit that can support us today as well as in the future when our family grows. From what I've been reading, it looks like the ideal regen cycle is about once a week, I'm afraid that if I buy a system that's too big, it wont regen often enough. Is it possible to buy a system that can support 4 adults but program it for only 2? I have city water with about 15 grains of hardness. As for valves, should I go for the Fleck 7000 instead of the 5600? The only issue I see is that I only have 3/4 piping.
