Canon or Nikon for plant pictures?

Most of the pictures I take are of landscapes, plants, flowers & insects which I use while teaching those subjects.

I have a Canon SD200 (released 2004) but, because I wanted the newer technology, recently acquired a Nikon S8100. I like the slightly greater weight of the Nikon, also the many improvements (stabilization; vibration reduction; etc).

But my problem is this:

The Canon images contain rich greens etc whereas the Nikon colors are pale, faded, and lack the richness that makes a plant look real. (Hmm, hope that makes sense.)

I could use Photoshop but I would have to correct *every* image. (Plus I am a true amateur with that program.)

So my questions:

1. Am I missing an adjustment/setting on the Nikon camera to obtain the image color and depth I need?

2. Should I return the Nikon (have 8 days left) and get something else?

3. If I get something else, should I stick with a Canon? (I have a Canon D40 with good color rendition but I need something smaller to fit in a pocket for everyday use.)
