DIY Knock Down wall texture?

We have recently moved into a home built in the 70s. Most of the house is painted with a very flat finish. Now that we are ready to repaint, we have discovered that the flat paint used in most of the house was chosen to downplay inconsistent texturing of the walls.
In areas that have been renovated (kitchen and bath rooms) there is a knock down texture. The other areas have either a very skimpy knock down, or a bad orange peel, sometimes both in the same room.
I'm going to use paint with a little sheen, because I need the reflective quality to add more light to the rooms. This inconsistency in texture will become very obvious when painted with a little sheen.
So the question is - can I do the knock down texture myself? I've seen kits at the hardware store. Or is that more for a repair and not a whole wall? I'm fairy handy.
