I just finished painting my cedar table with two coats of primer and two coats of latex exterior paint. How long do I have to wait before put two coats of poly?

You can apply the poly according to the paint label recoat instructions.

If the paint has a sheen, and is good quality, there isn't a reason to apply poly.

I would let it dry for a week. Acrylic pol works very well - I did this to a bench - it's been 10 yrs - looks good a new!
