Chalk paint is an easy option as it does not require any primer or pre-coating. But as far as oak cabinets are concerned, I would suggest you to not use chalk paint as the finishing is not that good. Try a de-glosser first, followed by sanding the material lightly and after that apply the coat of paint. I hope you will get desired results.

I think I'd use a good deglosser no matter what, since your cabinets will get a lot more use than regular furniture.
I'd also use the finishing technique of rubbing them with your hand in a brown paper bag. Unless you're antiquing, that is. The paper bag makes it very smooth without taking off a lot of paint.

Something to also consider. Wax comes off with Windex, 409, and some waxes, vinegar. So if you do this, I suggest planning to top coat them with a couple of coats of polyacrylic (non-yellow, vs. polyurethane)
