Looking for Cream of Cauliflower Soup recipe

Posted by Songbird_MO (My Page) on

I'm looking for a Cauliflower soup recipe that I thought I printed off one of these sites a week or so ago...now I can't find my copy, OR the recipe again ANYwhere, and I have bought the cauliflower, cheese, and everything to make it!! I've searched and researched all of these cooking sites, and haven't found it, but I'm quite sure I found it on here somewhere!! It was creamy, too, because you blended or pureed part of the cauliflower, after it had cooked. Any help?

RE: Looking for Cream of Cauliflower Soup recipe

This is probably not the recipe you're looking for, but it's oh-so-good!! From Bon Appetit, circa 1986. One recipe serves 4-6.

1 head cauliflower, cut up, steamed
1/4 cup unsalted butter
2 medium yellow onions, chopped
4 garlic cloves, pressed
One 14 oz. can chicken broth
1/2 cup cream sherry
2 cups whipping cream
1/2 tsp nutmeg

Puree steamed cauliflower in food processor until smooth, about 30 seconds. Melt butter in large saucepan or Dutch oven over medium heat. Add onions and garlic, and stir until onions are translucent ~ 5 minutes. Add cauliflower puree, broth, sherry and nutmeg, and simmer 10 minutes. Add cream. Salt and pepper to taste. Simmer 10 minutes more to blend flavor. Sprinkle with nutmeg and serve hot.

Not exactly low cal but definitely worth it for a treat!
