What to do with 10 pounds of chicken?

We got a great deal on boneless/skinless chicken breasts yesterday ($1.59/lb) and bought 10 pounds worth. I cut some up into strips and froze in packets for stir-fry meals. I was also going to make up some marinades tonight and freeze some in marinade.

Other ideas would be greatly appreciated, I still have a lot left!

If you have a grinder, you could grind some up for chicken burgers as a variation to whole grilled chicken breast burgers.

You could also poach some, then shred and freeze for quick meals (salads, tacos etc).

Also just freeze whole (in meal-sized amounts) to take out for baked, grilled, or skillet-browned chicken dinners.

If you want to invest a little time, pound some of them out to about 1/4 inch thickness. These can be used for chicken cordon bleu (you could even put in the slice of ham and swiss and roll up before freezing) or chicken parmesan later. I have tried breading and browning first then freezing (for the chicken parmesan) but the breading comes out soggier than I'd like when reheated.

Great stuff, but way too much to give to a pound of worms all at once. Smash or cut the grapes, too. Tough for the worms to "bite" through the grape skin. Any chance you have a regular compost bin? A converted trash can would work (see link below). Find a tray to collect any drippings if you're keeping it inside the warehouse. Then you could dump the fruit in this bin and take stuff out when you need it for the squirm. Of course fruit flies may become an issue. There are ways to reduce that problem, but not to really eliminate it. Andrew Here is a link that might be useful: garbage can compost bin

OMG - don't forget Sol's Caramel chicken!!!!!!! If you look through, I think just the previous WFD thread, she posted a pic. Of course, her pic will sell you quicker than mine will - lol. This stuff is to die for. YUMMMMMMM Chicken in Caramel Sauce - Sol This recipe is from the Washington Post, which adapted it from a recipe from the Slanted Door restaurant that appeared in a cookbook called The Secrets of Success: Signature Recipes and Insider Tips from San Frans Best Restaurants by Michael Bauer 1/2 C packed dark brown sugar 1/4 C water 1/4 C Asian fish sauce 3 T rice vinegar 1 tsp minced garlic 1 tsp soy sauce 1 tsp thinly sliced fresh ginger 1/2 to 1 tsp freshly ground black pepper (1/2 usually enough for me) 2 small chili peppers, fresh or dried, halved (I always use fresh) 1 T canola oil 1 shallot thinly sliced 1 1/2 - 2 lbs boneless, skinless chicken breast or thigh meat, cut into bite-size pieces (can use a combo of light and dark meat, if you prefer) In a small bowl, combine brown sugar, water, fish sauce, vinegar, garlic, soy sauce, ginger, pepper, and chilis, and mix well. Set aside. Heat oil in a large skillet over high heat (can also use a wok, but Ive had better luck w/a skillet). Add shallot and cook, stirring, until brown, about 5 minutes. Add chicken and cook, stirring occasionally, until lightly browned on each side but not cooked through, about 5 minutes. Stir the reserved sauce mixture and add to skillet. Bring mixture to boil, reduce heat to med-low and cook, stirring occasionally, until the liquid is reduced by about half and the chicken is cooked through, about 15 minutes. Remove and discard the chili peppers. Remove pan from heat, set aside until sauce has thickened and cooled slightly, about 3 minutes. Serve with rice. Note: This is traditionally a Vietnamese dish. If you havent cooked w/fish sauce before, youll notice that its pretty stinky before its cooked (!), but when the sauce is all together it gives it a really distinctive flavor that would be difficult to duplicate without it. Im able to get it in my local grocery store, but if you cant, then Asian markets will be sure to have it. The dish can be more spicy or less, depending what you do w/the pepper and chilis. If I want it less spicy, I remove all the seeds from the chilis before adding them to the sauce. This time, I left most of the seeds in, and it was very spicy. Probably theres a happy medium and it would be spicy enough w/about half the seeds. If you prefer it to be more sweet than spicy, remove all the seeds and use a bit less black pepper (even tho I like it spicy, I never need more than 1/2 tsp of pepper). ((One problem I have is that the chicken is usually done faster than the sauce is reduced. It doesnt particularly suffer as a result, but it would probably help if I used a larger skillet so the chicken could brown faster while cooking for a shorter time. )) I'm not sure whose note this is! Oh boy, where do I start. CHRISTMAS EVE Appys Fried calamari Sue's mini crab cakes Grilled scallops wrapped in bacon 1st Course Mom's Baked Clams (we've got her method down pat) Mom's Shrimp Salad (shrimp, celery, garlic, olive oil, lemon) 2nd Course Dad's mussels with Basil and garlic cream sauce Main Sliced broiled lobster tails over linguine with scampi cream sauce CHRISTMAS DAY Our friends son who is a fantastic trained Chef (he is currently the head chef at Flatbush Farm in Brooklyn)prepped at my house (a tradition) and we ate next door at his parents, our dear friends. Despite our main sewer pipe backing up and spilling water into our basement, we had a fine day. Thank goodness for roto rooter. First Course Sliced blood oranges with roasted orange, red, and peppermint baby beets and baby arugula salad. 2nd Course Goat ricotta knocchi with braised brisket and beef/pork reduction (unbelievable) Main Beef filet topped with fresh butter-poached lobster and bernaisse, glazed baby carrots, pureed potatoes with truffle butter. I think I'm forgetting something but let me tell you, this was one amazing meal. I got to keep the leftover stuff he didn't user which I will be using for NY Eve! We usually roast a chicken on the BBQ and then have leftovers. I often add chicken to rice, which is what I did last night. I cooked the rice in the PC with celery, mushrooms, onion, and chicken broth. When it was done, I added chopped chicken and then put it on low heat for a few minutes. Often I make chicken salad with leftover chicken, and I put it through the meat grinder and use a recipe similar to what I use for deviled ham. I'm more creative with leftover chicken than I am with cooking chicken in the first place. If I do not put leftover chicken in rice, I often add it to wide egg noodles in a mushroom velouté sauce or else put it in a Japanese style soup. The last chicken soup I made was avgolemono because I had just picked lemons. Another method for cooking chicken is Yucatecan (Chicken Pibil), which uses sour oranges, chilies, and achiote paste. This is my favorite chicken for enchiladas, and I make an enchilada sauce with more achiote paste. I am now thinking about making another trip to the Yucatan.

Cube some for Chicken chili and freeze it (the chili) for easy hot meals on cold days, and make homemade chicken/noodle soup...

Thanks everybody for the great ideas!!!!

Well, I made a big pot of chicken noodle soup and froze it in meal-size portions. I was very excited when I calculated that the soup averaged about $1 per serving. I also froze some whole in different marinades for easy grilling and broiling. Finally, I made a crockpot full of chicken cacciatore. We had some for dinner the night I made it and froze the rest in meal-size portions for easy heat and serve meals later.

I really like all of the ideas. I can't wait till chicken goes on sale again to try them. I have to try the chicken cordon bleu idea!!! I'm hoping to get a Kitchen Aid stand mixer with a meat grinder attachment from Santa and will definately have to try grinding my own lean chicken or turkey breast meat!

You could also dice some of the chicken for chicken salad sandwiches and chicken fried rice!

This is a really good chicken recipe. It is easy to make. I made it and divided it into 3 pans and froze 2. I have not tried the frozen ones yet, so I can not give a report on how it works after freezing.
The recipe is from the Recipe Hall of Fame cookbook.

Sour Cream Chicken Enchiladas
4 chicken breasts
1 onion, chopped
1 tablespoon margarine
1 (4oz) can chopped green chilies
2 (4oz) cans sliced mushrooms, drained
1 Â¼ cups shredded Cheddar cheese
Â½ teaspoon garlic powder
Â½ teaspoon chili powder
1 cup sour cream
12 flour tortillas
Â¼ cup flour
Â¼ cup melted butter
1 cup shredded Monterey Jack cheese
1 Â½ cups sour cream
Chili powder to taste
1 Â½ cups shredded Monterey Jack cheese
Rinse chicken and pat dry. Cook in water to cover in saucepan until tender. Drain, reserving 1 Â½ cups broth. Cool and chop chicken SautÃ© onion in margarine in skillet. Add chicken, green chilies, mushrooms, Cheddar cheese, garlic powder, Â½ teaspoon chili powder and 1 cup of sour cream; mix well. Microwave tortillas on high for 1 minute or until softened. Spoon the chicken mixture onto tortillas. Roll to enclose filling. Place seam-side-down in greased 9x13 inch pan.
Blend flour into butter in saucepan. Stir in reserved broth. Cook until thickened and bubbly, stirring constantly. Stir in 1 cup of Monterey Jack cheese, 1-Â½ cups of sour cream, and additional chili powder to taste. Pour over enchiladas. Bake at 350 for 30 minutes.
Sprinkle with remaining 1 Â½ cups of Monterey Jack cheese. Bake just until cheese melts.
Yields 6 servings.

There is a craze running through restaurants in our area called chicken fried chicken, done like chicken fried steak. You pound the chicken into thin fillets about 1/2 inch thick and coat in a chicken fried steak flour/seasoning mixture (adjusting the beef seasoning for chicken seasonings) and fry it like you would chicken fried steak. Make the country gravy to top it and VOILA! I wish I had your 10 pounds of chicken right now. Yesterday at our .99 Cent Store I purchased 5 Kraft's Freshmade Creations Dinner Kits that make 6 servings each. I got 3 cheese chicken enchiladas, cheesy chicken and rice with broccoli, chicken parmesan with linguine, mexican style tortilla dinner bake and southwestern style chicken . . . all for just $4.95.
