Once a Season Cooking

Yesterday I bought vegetables at a farmers market. Got corn, broccolli and cauliflower. Today I blanched and froze them all. DH and I have frozen corn, broccolli and cauliflowerr all set for the coming winter. Somehow, I feel "safe" because I have a freezer full of vegetables ready to go! Wait a m inute. I'm saving some of the broccolli and cauliflower to add to carrots for an oven-baked vegetable dish for today. Threw veggies on a cooking sheet, will add salt, pepper, herbs and spices (marjoram, paprica, cayenne, coriander) then drizzle olive oil and cheese, pop in the oven. May not even need meat. This dish is one of my fall favorites!

You would be wise put an alarm on the freezer in case electricity goes off.

We usually notice when electricity goes off, however, if freezer is in the garage and current flickers a little tripping the breaker you might not discover for several days or a week. This happened to my son, lost a whole beef.
