Freezing Fried Rice??

Has anyone ever tried yto make this dish and freeze it? My daughter really likes fried rice and it fits into her meal plan ( she is a diabetic) and It would be nice to have some that I could make ahead for her so from time to time if I am away she could take it out and microwave it for herself but I don't know if it would work very well. Any ideas?

Has always worked for me - I cook it all the way too - tastes best if warmed up in a frying pan though - although just microwaved isn't bad either.

I find it a little dry if reheated in the microwave. When I've frozen it before, I like it better reheated in a little oil in a frying pan or even chicken broth instead of oil. Otherwise, it freezes beautifully.
