Oh and I should also mention that canning destroys the vitamin C, as well as the health-giving probiotics. Morse's sauerkraut and other artisanal sauerkrauts (as well as homemade) are never canned, and are live and healthful. To find out how easy it is NOT to can sauerkraut, (and why you don't need to, yet it is perfectly safe) I recommend www.wildfermentation.com or google the term 'sandorkraut' Good luck, and I think you will all be amazed to know that the hassle of canning not only is unnecessary, but makes the kraut less good. Think of the storebought canned on-the-shelf kraut, and then think of the type you find in the deli section, under refrigeration, either in tubs or bags. The deli type is squeaky/crunchy against the teeth, and more complex and delicious. It also still has full nutritional value, whereas the canned type has its nutrients destroyed by the heat and pressure.

Maybe I can figure some other way to cook a little for tonight - braise with some ACV, maybe some chopped apples? I only have Gala. I found two real winners in March. I've already made the salmon/bread salad twice! This recipe is by Robin Davis, the food editor of The Columbus Dispatch, to feature one pot meals that aren't casseroles. She suggested adding some baby spinach leaves, and that was GREAT (pretty, too). She adapted it from one in Food & Wine magazine, so I looked that up the second time I made it. That one called for putting the dressing and parsley in during the cooking, not after, and added capers. I put capers in the second time. It's good, but not necessary. WARM PAN-ROASTED SALMON BREAD SALAD Makes 4 servings Salad: 4 cups large bread cubes (preferably from artisan or peasant bread loaf) 2 garlic cloves, smashed 3 tablespoons extra virgin olive oil 2 pints grape or cherry tomatoes, halved Some baby spinach leaves and/or drained capers, optional Salt and pepper 1 pound skinless salmon fillet, cut into 2-inch chunks Juice of 1 lemon 1/4 cup chopped parsley Vinaigrette: 1 tablespoon red wine vinegar 1/2 teaspoon Dijon mustard 1/4 teaspoon dried thyme 1/4 cup extra-virgin olive oil Salt and pepper To make salad: Preheat oven to 450 degrees. Toss bread and garlic with 2 tablespoons oil. Roast 5 minutes until bread is lightly toasted. In a large bowl, toss the tomatoes with 1 teaspoon oil. Season with salt and pepper. Add to bread. Roast 10 to 12 minutes, just until the tomatoes begin to break down. Toss the salmon with the remaining 2 teaspoons oil and lemon juice. Season with salt and pepper. Nestle the salmon into the bread-and-tomato mixture. Roast until the salmon is just cooked through, about 6 minutes, adding spinach and/or capers a couple of minutes before done. To make vinaigrette: Transfer garlic to a small bowl and mash. Whisk in vinegar, mustard and thyme in a small bowl. Gradually whisk in oil. Season to taste with salt and pepper. Drizzle vinaigrette over salad. Add parsley. Toss to combine (or put in with tomatoes). Serve immediately. PER SERVING: 612 calories; 28 g protein; 30 g carbohydrates; 3 g fiber; 42 g fat (7 g saturated); 63 mg cholesterol; 340 mg sodium Here's the other one. FABULOUS! It's from Mark Bittman in the NYT in late February. Uh oh, maybe it was still February when I made it ... We don't eat pork, so I used a TJ vegetarian chorizo. Next time I will use a kosher merguez or other spicy real sausage. But even with the fake stuff, this was dynamite. Fried Chickpeas With Chorizo and Spinach 1/4 cup olive oil, plus more for drizzling 2 cups cooked or canned chickpeas, as dry as possible Salt and black pepper 4 ounces chorizo, diced 1/2 pound spinach, roughly chopped 1/4 cup sherry 1 to 2 cups bread crumbs. 1. Heat the broiler. 2. Put three tablespoons of the oil in a skillet large enough to hold chickpeas in one layer over medium-high heat. When its hot, add chickpeas and sprinkle with salt and pepper. 3. Reduce heat to medium-low and cook, shaking the pan occasionally, until chickpeas begin to brown, about 10 minutes, then add chorizo. Continue cooking for another 5 to 8 minutes or until chickpeas are crisp; use a slotted spoon to remove chickpeas and chorizo from pan and set aside. 4. Add the remainder of the 1/4 cup of oil to the pan; when its hot, add spinach and sherry, sprinkle with salt and pepper, and cook spinach over medium-low heat until very soft and the liquid has evaporated. Add chickpeas and chorizo back to the pan and toss quickly to combine; top with bread crumbs, drizzle with a bit more oil and run pan under the broiler to lightly brown the top. Serve hot or at room temperature. Yield: 4 servings. Mmm, I can't wait to make these again.

Ingredients 3tablespoons soy sauce 2tablespoons oyster sauce 2tablespoons hoisin sauce (see note) 1tablespoon toasted sesame oil 1/4teaspoon five-spice powder 1pound boneless country-style pork ribs , trimmed of surface fat and excess gristle and sliced crosswise into 1/8-inch pieces 1/4teaspoon liquid smoke (optional) 1/2cup low-sodium chicken broth 1teaspoon cornstarch 2medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons) 2teaspoons grated fresh ginger 4 1/2teaspoons vegetable oil 4tablespoons Chinese rice cooking wine (Shao-Xing) or dry sherry 1/2pound shiitake mushrooms , stems trimmed, caps cut in halves or thirds (about 3 cups) 2bunches scallions , whites thinly sliced and greens cut into 1-inch pieces (about 2 cups) 1small head Napa or Chinese cabbage , halved, cored, and sliced crosswise into 1/2-inch strips (about 4 cups) 12ounces Chinese egg noodles (fresh) or 8 ounces dried linguine 1tablespon Asian chile garlic sauce Instructions 1. Bring 4 quarts water to boil in Dutch oven over high heat. 2. Whisk soy sauce, oyster sauce, hoisin sauce, sesame oil, and five-spice powder together in medium bowl. Place 3 tablespoons soy sauce mixture in large zipper-lock bag; add pork and liquid smoke, if using. Press out as much air as possible and seal bag, making sure that all pieces are coated with marinade. Refrigerate at least 15 minutes or up to 1 hour. Whisk broth and cornstarch into remaining soy sauce mixture in medium bowl. In separate small bowl, mix garlic and ginger with 1/2 teaspoon vegetable oil; set aside. 3. Heat 1 teaspoon vegetable oil in 12-inch cast-iron or nonstick skillet over high heat until just smoking. Add half of pork in single layer, breaking up clumps with wooden spoon. Cook, without stirring, 1 minute. Continue to cook, stirring occasionally, until browned, 2 to 3 minutes. Add 2 tablespoons wine to skillet; cook, stirring constantly, until liquid is reduced and pork is well coated, 30 to 60 seconds. Transfer pork to medium bowl and repeat with remaining pork, 1 teaspoon oil, and remaining 2 tablespoons wine. Wipe skillet clean with paper towels. 4. Return skillet to high heat, add 1 teaspoon vegetable oil, and heat until just smoking. Add mushrooms and cook, stirring occasionally, until light golden brown, 4 to 6 minutes. Add scallions and continue to cook, stirring occasionally, until scallions are wilted, 2 to 3 minutes longer; transfer vegetables to bowl with pork. 5. Add remaining teaspoon vegetable oil and cabbage to now-empty skillet; cook, stirring occasionally, until spotty brown, 3 to 5 minutes. Clear center of skillet; add garlic-ginger mixture and cook, mashing mixture with spoon, until fragrant, about 30 seconds. Stir garlic mixture into cabbage; return pork-vegetable mixture and chicken broth-soy mixture to skillet; simmer until thickened and ingredients are well incorporated, 1 to 2 minutes. Remove skillet from heat. 6. While cabbage is cooking, stir noodles into boiling water. Since pork tenderloin is our favorite cut of pork, I'm always looking for new ways to serve it. This was...delicious! The salty flavor of the capers pairs so well with the breaded schnitzel. It was also a fairly easy dinner to put together and the cooking time is quick. I served it with a simple salad on the side. Enjoy! Pork Schnitzel with Lemon Caper Butter Adapted from Gourmet Today Printable Recipe Note: I cut the recipe in half and only used 1 egg Makes 4 servings 1 ½ pounds pork tenderloin, slice into 1-inch-thick rounds 6 tablespoons cup unsalted butter (divided in half) 3 tablespoons olive oil (divided) 2 tablespoons capers, rinsed and patted dry 1 teaspoon fresh lemon juice Salt and freshly ground black pepper 3 eggs 1 ½ cups fine dry bread crumbs 6 tablespoons vegetable oil (about) (divided) Garnish: 1 ½ teaspoons chopped fresh flat-leaf parsley Lemon wedges Line 1 baking sheet with waxed paper and another baking sheet with paper toweling. Pound pork tenderloin rounds between two sheets of plastic wrap to ¼-inch thickness. Preheat oven to 200 degrees. Line a baking sheet with wax paper. In a small saucepan, melt 3 tablespoons butter. Stir in capers, lemon juice and a pinch of salt. Remove from heat and cover loosely to keep warm. Pat pork rounds dry and season with salt and pepper. Combine flour, salt, pepper and garlic powder; roll kabobs in flour mixture until coated. In large skillet, heat butter and oil over medium heat. Brown kabobs, turning frequently; drain excess oil. Sprinkle with soup mix. Add broth and/or water. Reduce heat. Cover and simmer for 1 hour or until tender. If desired, thicken pan juices.
