I would love to cook ahead and freeze meals so when I get home from work it wouldn't be so hectic. I got a new programmable crock pot for Christmas that I use 3 0r 4 days a week! I love the recipes I've seen on here and would love some freezable recipes. Our church is buying a freezer to stock meals for when people are ill, have new babies etc and I would love to be able to put some yummy frozen meals in there! I will share a recipe I got this morning. Hope it hasn't been posted here before

King Ranch Chicken Casserole

1 can Campbell's condensed Cream of Mushroom soup
3/4 cup Pace picante sauce
3/4 cup sour cream
1 TBS. chili powder
2 medium tomatoes, chopped (about 2 cups)
3 cups cooked cubed chicken
12 corn tortillas (6 inch), cut into 1 inch pieces
1 cup shredded cheddar cheese

Mix soup, picante sauce, sour cream, chili powder, tomatoes and chicken. In 2 quart shallow baking dish arrange half the tortilla pieces. Top with half the chicken mixture. Repeat layers. Sprinkle with cheese. Bake at 350 degrees for 40 minutes or until hot. Serve with additional picante sauce and sour cream. Serves 8.
To Freeze: freeze this uncooked. Defrost and bake for 40 minutes.

I'm new to all this too.... I have no idea where or how to begin. I have 4 adults in my home and 3 kids with lots of food allergies.
