Vettin - just a suggestion I think might work. You could season your chicken tenders with the spice ingredients and allow to sit in the refrigerator to flavor the meat (I would not let them sit longer than 2 hours, however). Then a very light dredge in flour, a dip in buttermilk and then pat on a nice coating of panko. Allow the coated tenders to sit for about 10 minutes to absorb some of the buttermilk liquid before placing in the oven Place on a parchment lined baking sheet. Give the tenders a quick spritz of PAM to encourage browning and place in a 400ð oven for about 20-25 minutes or until done. By using this method you have the spice flavor on the meat, the buttermilk does not make as heavy a coating as an egg wash and the panko gets nice and crunchy. The panko helps protect the tenders from drying out in the oven. You can freeze the tenders prior to baking (I lay them out in a single layer, freeze and then put in zip bags) so you have your chicken fingers ready to bake for busy days. hope this helps, beth

A friend and myself take a day and smoke alot of meat and after it cools, wrap and freeze it for whenever needed. It is always so good. We both do several slabs of pork ribs. We put them on double layers of heavy duty foil and let them cool and their juices settle, then wrap and freeze. I know you are going to finish yours on the grill, I put the frozen, wrapped slab in a slow oven for a few hours and it tastes just like it was just taken off the smoker. Enjoy your ribs!

A friend made this for us and it was so good I asked for the recipe. It's very unusual as the meat is browned, then marinated, then cooked. Her modifications are included: (MODIFIED) Braised Short Ribs for 4 people For the Marinade: 2 tablespoons peanut oil 6 (10-ounce) beef short ribs or 5 lb chuck roast at least 2" thick Coarse salt and freshly ground pepper 1 medium yellow onion, chopped (1 cup) 1 carrot, chopped (1 cup) 2 stalks celery, chopped (1 cup) 3 cloves garlic 1 bottle dry red wine, preferably Merlot or Zinfandel 1 small bunch fresh thyme For the Braise: 1 pkg Knorr vegetable soup, reconstituted with 3 cups water and simmered 15 min. 1 small bunch fresh thyme For the marinade: Brown the roast or short ribs. Place bone side in container just large enough to hold the meat in a single layer. To the same skillet, add the onions, carrots, celery, and garlic. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are tender and golden, 20 to 30 minutes. Add the wine and thyme. Bring to a boil, and simmer for 10 minutes. Let cool for 1/2 hr. Pour over the meat. Cover, and refrigerate for 12 to 24 hours, turning meat at least once. 4. For the braise: Preheat the oven to 350°. In a large Dutch-oven, have the soup stock at a boil, and add the marinade liquid. Bring to a boil again and taste for seasoning. Add salt, pepper, and some brown sugar if too tart.. Place the meat in the Dutch-oven and pour the liquid over it. 5. Cover, and transfer to oven. Cook for 3 hours. Uncover, and check for tenderness Meat should be falling off the bones and well glazed. Cook uncovered if you want to reduce gravy further. Her note: The recipe calls for six 10oz ribs (1 per person). That would total 3.75 lbs, for 6. I got 5.5 lbs for 5, and had leftovers for a couple of meals for myself. Increase other ingredients proportionately. For my 5.5 lbs, I also used about 2 Tbsp each of tomato paste & harissa, in the last half-hour. The other thing it doesn't mention which I did was to trim off pretty much all the fat on the outside of the ribs. I also cooked it much longer than the original recipe called for (90 min just wasn't long enough). Note: These recipes have been adapted from "Craft of Cooking" by Tom Colicchio. My dinner was a huge success! I'm a beginner with lots to learn and you have all been wonderful. We sliced the bones off the roast, salted liberally, and tied the ribs back on 2 days before cooking (another Serious Eats, Food Lab article - scroll down to SALT). I read that the salt will draw the moisture out at first, but then it will reabsorb the moisture along with the salt, carrying the seasoning deep within the meat. This was the only thing I did differently from a few weeks ago when I ran my trial run, and this roast was far superior. It was the same cut of meat (choice), from the same store (CostCo), and cooked the same way. So it must have been the 2 day seasoning. I let the roast sit on the counter for 2 hours, then used the Serious Eats Food Lab recipe to cook low and slow - it took 4 1/2 hours for the 11lb roast to reach 122. I did make a mistake here - instead of removing the roast from the roasting pan to sit for an hour (like I did 2 weeks ago), I simply tented the roast in the pan. I think the pan caused the roast to continue to cook. I used the same probe and oven as 2 weeks ago, so unless it went bad in that time, this has to be the reason it was overcooked. However, the flavor was fabulous, so I really have no complaints. Following the Serious Eats recipe - it did go back into the oven for 10 minutes at 500 to develop a beautiful sizzling crust. I made 2 pans of Yorkshire puddings. When everything came out of the oven and my guests were serving themselves, I popped the second pan in and proudly served a second helping to all at the table 30 minutes later. What I learned from this is the pan makes a HUGE difference! I bought a new muffin pan since I didn't have 2 and the new pan the YP's rose so high and popped right out unlike my old pan where they still looked OK, but I had to use a knife to work them out. I made my Au Jus ahead of time by making a rich stock from browning bones, oxtails, veggies for a couple of hours and them simmering them for 24 hours. I did this 2 weeks ago and froze it. Yesterday I let it simmer for another couple of hours and added any Jus from the meat before serving. I'm so glad I did this! Not only was it easier on me, but I never would have had enough Jus otherwise. Everyone took a little Au Jus cup on their plate and I put the rest into gravy boats for the table - most of which was used. I'm very proud of my dinner and I couldn't have done it without the help from all of you on this forum. :-) Thank-you! Jeri
