Shredded Chicken ???

I am looking for the directions/recipe for making shredded chicken (to be used for enchiladas...) I have no clue how to make it. Any recipes or tips would be appreciated.

Jamie, here is a recipe for shredded chicken that you can use in enchiladas as well as other mexican dishes.

Mexican Shredded Chicken

Yield: About 4 to 5 cups shredded chicken, plus broth

Traditional Mexican poached chicken uses water as the sole poaching liquid, but it also uses a whole bird with white and dark meat. The dark meat gives the broth a richer flavor than white meat alone. Because I use convenient chicken breast halves in this recipe, I add a can of low sodium chicken broth to the poaching liquid to make it more flavorful. After the chicken is shredded you can use it in all sorts of Mexican dishes, as described in my column Mexican Shredded Chicken & Toasted Corn Soup.

Ingredients

3 to 4 chicken breast halves,
with bone and skin (about 3 pounds)
1/2 onion, thinly sliced
3 cloves garlic, peeled and minced
1/2 teaspoon dried marjoram
1/2 teaspoon dried oregano, preferably Mexican
2 bay leaves
Pinch of dried thyme
1/2 teaspoon salt
1 (14.5-ounce) can low sodium chicken broth

Arrange the chicken breast halves snugly in a large, deep saucepan or pot. Sprinkle on the onion, garlic, marjoram, oregano, bay leaves, thyme and salt. Add the can of chicken broth and enough water to just cover the chicken.

Bring the liquid to a boil on high heat. Partially cover and reduce the heat to low, so the liquid just simmers. (Make sure the liquid does not boil again.) Cook for 7 minutes, then cover the pot completely and remove from the heat. Let the chicken cool in the broth for 30 minutes to 1 hour.

At this point, the chicken and broth may be refrigerated until ready to use. Once cold, the fat will solidify on top and can be easily discarded. The chicken and broth will keep 2 to 3 days.

Or, you may use the chicken immediately. Remove it from the broth and shred into small pieces, discarding the bone and skin. Reserve the broth for moistening the chicken shreds or for another use. (Discard the bay leaves.)

Uses for shredded chicken:
Serve in warm tortillas with salsa and lettuce. Pack into bolillos (Mexican rolls) with strips of pickled jalapeÃ±o and seasoned cabbage. Roll it into burritos, enchiladas or tacos. Mix it into a salad.

Uses for the broth:
Turn it into tortilla soup or Toasted Corn Soup, or use it as the cooking liquid for beans or rice.

All I do is simmer chicken parts in water for 3-4 hours until it falls of the bones then pull it apart in shreds (or all day in the crockpot). I usually also save the stock and make soup with it and some of the shredded chicken.

I LOVE sauerkraut balls! I can remember my mom and grandmom making these by the dozens at every party we ever had. I'm really not trying to hijack your thread, but here is another question for all of you who remember McGarvey's.... My grandmother (who lived in Fairview Park) used to make something she called "McGarvey's Peas and Peanuts". All I remember is that is had Spanish peanuts, green peas and some sort of white dressing or sauce that got mixed into it and she served it with crackers. I *think* she said it was served at McGarvey's as a bar snack in little bowls with crackers on the side. Does that ring any bells? Can anyone help with that recipe from long ago? Oh yea - and this is the recipe I use for sauerkraut balls - it is the closest I have found to what I remember, but I am definitely going to give the one posted above a try! ************************************************************* Sauerkraut Balls 3 tablespoons unsalted butter 1 onion, finely chopped 2 cups finely chopped cooked ham 1/2 clove garlic, crushed 6 tablespoons all-purpose flour 2 cups sauerkraut, drained and minced 1 tablespoon chopped fresh parsley 1/2 cup beef broth 1 egg 2 cups milk 2 1/2 cups all-purpose flour 4 cups fine dry bread crumbs 1 quart oil for frying In a large skillet, melt butter over medium-low heat. Add onion and cook until softened. Stir in ham and garlic. Cook mixture, stirring constantly for 1 minute. Stir in 6 tablespoons flour and cook mixture over moderate heat, stirring occasionally, for 3 minutes. Stir in sauerkraut, parsley, and broth; cook for 3 minutes or until thickened and paste-like. Spread mixture on a platter or cookie sheet and chill for at least 3 hours. Heat oil in deep-fryer or electric frying pan to 375 degrees. In a bowl, whisk together the egg, milk and 2 1/2 cups flour. Shape the sauerkraut mixture by level teaspoons in to balls, dip them into the egg mixture and roll them in the bread crumbs. Fry balls in batches for 2 to 3 minutes or until golden brown. Pulled Chicken Sandwiches (Crock Pot) Recipe A personal take on a recipe from the "Slow Cooker Bible" and based on recipes typical of North Carolina styled BBQ. The sauce is tangy and flavorful but not spicy as the amount of hot sauce is just enough to balance the sweetness of the ketchup. Certainly mild enough to serve to kids. It you want more zing, add more tabasco or a chopped chipotle pepper en adobo. (If your crock pot is large enough, this easily doubles and the leftovers can be frozen.) 4 servings 6Â¼ hours 10 min prep 1 medium onion, thinly sliced or 1/2 large onion, thinly sliced 3 boneless skinless chicken breasts Sauce 1 cup ketchup 2 tablespoons cider vinegar 2 tablespoons molasses 1 tablespoon yellow mustard 1/4 teaspoon black pepper 1 teaspoon onion powder 1/4 teaspoon cumin 1/2 teaspoon garlic powder 1/2 teaspoon Tabasco sauce 1 pinch salt Cut the onion in half and slice into thin half rings. Line the bottom of the crock pot with the onions. Trim the chicken breasts and place on top of the bed of onions. Mix all of the sauce ingredients together and pour on top of the chicken covering completely. (I make the sauce the night before so that it is a simple dump and run in the morning.) Cook for 6 hours on low setting. The sauce thickens and turns into a dark rich brown during cooking. At the same time the onions dissolve into the sauce. When the chicken is falling apart tender, take two forks and shred the chicken. Serve on top of split buns. I like mine toasted so they hold up better to the weight of the shredded chicken. Suggested sides include baked beans, corn on the cob, coleslaw or cucumber salad.

Blueberry loaf made easy and sooooo good. 2 eggs 1 cup (8 oz) dairy sour cream 1/2 cup milk 2 tbs butter or margarine, melted Two 7 oz pkg Martha White Blueberry Muffin Mix 1/2 cup chopped pecans Preheat oven to 350F. Grease bottom of 9 x 5 x 3 inch loaf pan; set aside. Break eggs into bowl and beat lightly. Add sour cream, milk, butter; and muffin mix; stir just until blended. Stir in pecans. Pour into prepared pan. Bake 45 to 50 minutes, or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Gently loosen sides of loaf. Turn out onto wire rack to cool completely.

I don't really use any special recipe. (And shredded turkey is great too.) Just take a chicken prepared any way and use a fork. Scrape it and it'll come apart in shreds. Great for chicken salad, chili, sandwiches, etc.
