Wow...I didn't even know this forum was here! I've been living in the kitchen & building forums. I raised 4 kids & a husband in the 'wilds' of Alaska. We're empty nesters now but I still like to cook in bulk & freeze. Having 4 kids I cooked a lot :) Baked & baked some more. I don't bake anymore & I do miss it but I sure don't need it! :) Anyway, I'd like to join in on the fun & share a few recipes. Thank you, everyone, for such great ideas! EDAMAME SALAD This is a very easy salad that is so colorful, fresh & low carb. 2 bags shelled Edamame, (soybeans) cooked according to package directions, run cold water over to stop cooking. Note: You can buy shelled Edamame in the freezer section Toasted sesame seeds, if desired Roasted slivered almonds Fresh Italian flat leaf parsley Red bell peppers, diced for color contrast Small cubes of cheese (Habanera Jack, etc.) Grape tomatoes Vinaigrette dressing of choice (I use Balsamic vinegar & Extra-virgin olive oil.) Option: Add some smoked salmon for a more main dish salad Mix all ingredients except nuts & chill. Add nuts just before serving.

Yes, Alexa, I got that impression from another post you made some time back. I do have to say though, that you are in the minority. I have only had two people detest them: (well, that I know of): you, and one of my students. Yep. We all have different tastes. I love rich, and cheesy, and detest too cloyingly sweet stuff, whereas most of the others love the sweet stuff. Actually, what I said was, if a recipe sounded too sweet to me, I would not choose to make it. I make lots of savory recipes that don't sound good just to see if they are. I am interested to hear if she likes it. Actually, I like teresa's idea of using wine instead of ginger ale. That would eliminate the sweet. As a matter of fact, I think I will try it with wine. Now that does sound good to me.

This recipe is from the Once-A -Week Cooking forum, Your Favorite Family recipe thread. I've been making it for years and it's always a favorite. My grandsons love it, and in fact requested it for camping this weekend. I cook it in my Nesco Roaster and serve it over mashed potatoes. I use Eye of Round Roast cut into chunks, and no mushrooms except what's in the soup (grandsons don't like them). Teresa, I don't use bread crumbs. Here is the recipe as copied from other forum No Peek Casserole 2 lbs stew meat ( i use 3 lbs) 1 can Campbell's Chicken Mushroom Soup 1/2 cup Gingerale 1 pkg Lipton Onion Soup Mix 1 4 oz jar mushrooms, drained (optional) Preheat oven to 300. Comebine ALL ingredients (DO NOT brown meat and DO NOT dilute soup with water) together. Mix well. It will be lumpy before it's cooked. Pour into a casserole dish and cover. Bake 2 1/2 to 3 hours. My parents enjoy tuna noodle casserole - if you need a recipe let me know. Don't forget rice - shredded chicken with some broccoli or spinach and a creamy sauce with or without cheese is nice. My parents like ground beef and its easy to eat - here are some that they like and I like too. Meat And Potato Loaf Easy meatloaf and potatoes in one dish Ingredients 4 cups thinly sliced peeled raw potatoes, 1/4 cup chopped onion, 1 lb. ground beef, 5 oz. can evaporated milk, 1/2 cup breadcrumbs, 1/4 cup chili sauce (or catsup), 1/4 cup chopped onion, 1 tsp. Worcestershire sauce, salt and pepper to taste Directions 1. Mix potato slices and 1/4 cup chopped onion together and place in greased 2 quart square baking dish. 2. Mix remaining ingredients together and spread over potatoes. 3. Decorate top with more chili sauce or catsup (if desired). 4. Bake 350* for 1 hour.
