If that is where the top meets the backsplash you DO NOT use grout. All changes in plane get caulk not grout. Also that picture is a little close, and that makes it tough to even see what were looking at. Why isn't your granite contractor going to properly fix the tile since he damaged it? If he does not want to eat the cost surely his insurance would cover it, that's why they have insurance.

If that is a 3/4" chip, then that's a mighty large grout line.
Matching sanded caulk (same color and texture as your sanded grout) is what is called for is a backsplash/CT seam. Chips in tiles may be repairable with epoxy filler and artist's colors, or by replacing the damaged tile.

Why post a pic of what "most" of the chips look like (which isn't bad at all in my opinion) instead of the big chip that you mentioned?
