Need some advice with an old slate roof...

Have an 1870's house with a really nice slate roof.

A quick evaluation: Some of the rafters have sagged over the years and have been sistered with 2x's to stabilize, not repair the sag. Otherwise, it just looks great despite the visible wavy sags.

I need to replace the ridge. It appears to be 2 foot lengths of a tin material which someone covered with wider strips of galvanized. Both are blowing in the wind, literally.

What's good to use for a ridge?

Also, I imagine that because of the sags that some of the slates must be losing their hold. How concerned should I be about someone clambering above the slates?
