How to light a kitchen work wall with vaulted ceiling?

Hi, everyone! I'm realizing that our electrician (who I thought would be able to provide some lighting design guidance) is not really able to provide us any service other than installation :-)

The kitchen we are building has a vaulted ceiling which goes from 8' along the walls to 12' in the center. Most of the work space is along the 8' high wall. What is the best way to light this kitchen? We were planning on mostly can lights with pendants over the island (where prep and casual dining will take place), but now I am wondering if the can lights will be enough? (Maybe if they are the adjustable kind?) Or should we consider some sort of semi-flush spotlight?

Any guidance you can provide will be greatly appreciated. I am at a complete loss!
EDIT: I should have mentioned that there are NO UPPER CABINETS, so under cabinet task lighting is not an option.
