Converting Can Lights to Spotlight suggestions

I have a home with a 20' high cathedral ceiling in knotty pine. The previous owner installed 7-8" can lights in it nearly up to the peak. There is also a large ceiling fan dropped down 4 ft. from the peak. Whenever the lights are on at night and the fan is in use, there is a "strobe effect" in the room due to the highest 3 can lights being higher than the height of the fan blades.

Because the ceiling is knotty pine, removing the recessed can lights entirely is not an option -- could not patch it, won't paint the ceiling. However, we could perhaps replace the recessed cans with some sort of swivel spotlight that could be rotated to highlight art work on the wall.

I can not seem to find conversion spotlight kits for 7-8" base can lights. Is there anything out there? Could I perhaps just use a 5" base spotlight and use some sort of round ring or filler plate under it to cover the old can ring?

Any ideas? I'd like it in brown/bronze, but am will to paint them.
