4 " recessed cans /Lighting Info page way beyond my understanding

I tried, I really did. If you want to suggest some search terms I'm glad to try and come back with questions later.
If you want to direct me to other posts for answers, fine.
ceilings are low: 7.5 feet in old house
4" recessed cans already installed in new construction.
I just need to know which bulbs to specify. Not cold-white.
Same for undercounter: not cold white.
I'm pretty sure I specified dimmers for all overheads. No reason to have glaring full light when we're not working in there.
Preferred dimmer switches?

Think a pendant over sink would work.

Finally, we're wired for two sconces: side of kitchen table in corner and in a tiny passage off kitchen. (remember this is a cobbled together 250 year old house)
The sink and sconce lights could be "old" I have iron handles on cabs, and iron baker's rack.

I decided not to go with pendant light over table b/c if we ever move the table there is no hanging light that won't hit you on the head, even if you're under 6 feet tall. So dimmable cans, sconce on wall.

Thank you any ideas at all that will help me make these last decisions at the end of a very very long and arduous process.
(I said old house, didn't I, without TOH budget)
