led undercabinet lighting- kiss

I am doing a DIY kitchen remodel and have gotten to picking out undercabinet lights. I have been planning on doing plug in, probably dimmable LED lights. The kitchen is U shaped with a break for a window. I had been planning on putting a light bar over my primary working countertop for stronger task lighting, and then possibly LED strips under the other cabinets for more ambient light. I had an outlet installed inside one of the cabinets, planning to put the plug and transformer there, and drilling a hole to run the line out to the lights.

So, my questions:
Looked at the Environmental Lights website several months ago. Seems like decent lights and they would do lots of the system planning, which would be useful at this stage of design fatigue. Or is there another simple idiot proof system?

Should I run a line under the window to the other set of cabinets, or have a separate plug / transformer over there- plenty of outlets, none concealed.
