Completely gutted...NEED Kitchen Lighting Recommendations

Kitchen is completely gutted with walls opening to Dining Rm and Den on either side. We already have high hats from old kitchen and current matching high hats in Den. Should they match? We need recommendations for lighting. Will most likely do plugmold/wiremold under cabinets. Would like high hats back in the kitchen and pendant lighting over the island and maybe one over the sink. Whether the high hats match depends on factors like
1. Do you intend to make changes in the den?
2. If you intend to use led lighting such as the cr6/ lr6, the trim will not match.

The kitchen should be more brightly lit than other areas. I like using the rule of ~35 lumens per sq ft to figure out whether the lighting is adequate and how many cans would be needed.
