Recessed Lighting 7'5" Kitchen Ceiling

We just bought a house and are replacing the ceiling in our kitchen/eating area. We estimate the space is approximately 300 square feet. There is some natural light (window above the sink and two sliding glass doors leading to the back deck). We're thinking of installing recessed lighting but we have no idea if our idea is practical.

Our ceilings are probably just under 8 feet in height, we have white cabinets and our walls are a light gray. We were thinking of installing 8 recessed lights (5 inch cans with the exception of one can over the sink which we were thinking would be 4 inches) as well as two pendant lights over the kitchen table.

Does this sound reasonable to others? I understand there are different can options with different bulbs. Does anyone have a recommendation for a kitchen of our size? We are trying to make a final decision before Thursday, when our electrician is coming. I appreciate your feedback.
