I need a can-light education please

I am trying really hard to come up with a design for my new home's lighting but I am so afraid I am going to make a mistake that is not easily fixable. I went to Lowes web site and got myself even more confused. It seems can lights range from $5.50 to over $50. I have no clue what I need, so I can't select the ones to get. The ceiling is sloped, starting at 8' and going to 13'. There are 2 northern exposure sky lights (24" space between) in the dining room and there will be a ceiling fan between them over the table. There will also be a ceiling fan in the living room that is open to the dining room. I know I need the kind of lights that can be insulated around and the framing structure is such that it does not matter if the cans project past the ceiling joist (which is the truss bottom chord).

Can someone please help me? I am building this house myself and really don't have the funds to hire a lighting designer.
