Replacing knobs

Hello, first time house-owner here so I am very untenured at many things. My old place here has a lot of superficial damage, such as missing knobs.

Some examples, missing knobs on chandelier switches (the ones you need to rotate), and missing knobs on those kitchen stove over-head vent/light rotationary switches.

I'm curious if I'm correct in assuming these days I have no choice but to replace the entire switches, etc. Or if there really are standards and I can replace the knobs cheaply enough somewhere?
