If the light is not above the sink, it will be noticeable. A separate light (with its own switch) could be deployed in addition.

There should be a cooker hood unless you're planning on using a downdraft cooktop (imo those don't work well).

So, if I move the one to the right and center it above the sink, then it would be only 37" away from the one in the corner and I'd have a "hole" between the refrigerator and sink correct? I could add another slightly to the left of the refrigerator. The little remaining symmetry I had is getting blown too!
A major concern is having too much light. My wife's very sensitive. I plan on a dimmer, so maybe that would take care of it?

Since you have UCL beside the pantry cabinet, you could shift the row of lights down so that there are 2 flanking the sink symmetrically.

The final layout is going to be impacted by the location and direction of the ceiling joists and whatever else is above the ceiling board.

Having both the UCL and general lighting on separate dimmers would be a good idea. Lutron dimmers reduce the max light output by 5% (by default).

On the topic of UCL, I was planning on getting a 24V LED strip, putting it on an angle "track" with a diffuser and mounting it to the underside FRONT of the cabinet so it shines back. We're putting what is essentially slate countertops (no reflectance) and some shiny-er tile backsplash. With the can lights now being farther back, should I instead mount the UCL in the back to avoid shadows? Or even in the middle shooting straight down?
