Oh fudge!

I just made mint fudge. Traditionally, my family made a 2 layer fudge (peanut butter and chocolate). My husband's family always made a peanut butter only fudge. I love chocolate fudge with walnuts.

Well, the fudge saga continues. I told my boss yesterday that after two attempts, I was still having trouble with the fudge being grainy. To add insult to injury, the person that gave her the recipe told her how easy it was! Unfortunately, that person is out of town, otherwise she would be making this "easy" recipe. I'm going to give it another go using Carol's suggestions again tonight. I think if I can get the sugar totally dissolved before I start boiling the fudge, I may be okay. This has definitely been a learning process for me! Oh, and Carol, I live in western Tenn. where humidity is a way of life. I probably shouldn't even attempt it today as we are expecting thundershowers later on today, but the party is tomorrow! Thanks again for all the help!

Janet, sounds like you didn't cook it quite long enough or more likely it wasn't stirred long enough before pouring into the dish. The fudge will start to thicken and lose its gloss , and that is when you pour into the dish. You can't go by time. I love Walgreens, there's one right on the way home from my work and I can stop in there for a quick snack or drink if I need to. The other day I was working three in a row, first day I had locked my keys to my locker in the locker. Had to have someone come and cut it off. So, I thought I'd have to drive back to my town and then all the way to our huge Wal-Mart (which I hate, by-the-way) to get a new lock at 9:00 pm that night. Then I thought maybe Walgreens might have one as I was driving down the road...and after a quick stop and look around I found quite a few to select from. No huge parking lot to walk through in the cold, no huge store to hunt down what I need, no long lines with only 2 checkouts open. Was in and out and on my way home so I could get some sleep and be up bright and early for the next workday. Love Walgreens. They also have cute candy-stocking stuffers every year.

I like fudge in my mouth. My favorite kind is sacrilege. I like it made with marshmallow cream, and refrigerated, with loads of really cold milk. Strange, but that's my own way. My son has taken to this too. I also really like peanut butter. That one is room temp.

My fudge is a microwave recipe. Been using it for years. Sometimes, I make it with pb butter, other times I add some chopped nuts. Mostly just plain chocolate fudge.

Microwave Fudge

Ingredients:

Yield:

36

pieces

Units: US : Metric

1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)

Directions:

Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl.

Stir in milk and vanilla.

Mix well.

Place butter on top.

Microwave on high, 2 minutes.

Beat with wooden spoon until smooth.

Stir in nuts (OPTIONAL).

Spread in 8 X 8 X 2 inch baking pan.

Chill about 1 hour or until firm.

Cut into 36 pieces.

to make it peanut butter I just toss in a big glob of peanut butter and use peanuts instead of other nuts.

I was just thinking about fudge today. I haven't had it in many years, but when I was a child my dad's cousin Peggy would mail a box of her homemade fudge to us every Christmas. She made two kinds: chocolate and penuche. We would open it first Christmas morning and have a piece while we opened gifts. It was so delicious!
