Today was a little above freezing, with no wind; a comfortable day. I was using the balcony as a frig all day as my frig was pretty full.

We did our groceries this morning, and I was in the kitchen for most of the day.

I made a huge Greek salad, our favourite version of cherry cheesecake----refrigerated, not baked. (cream cheese and whipped cream/Dream Whip or Cool Whip on a graham wafer crust, topped with cherry pie filling).

Dinner was some Greek salad, meatloaf, sauteed corn, heated leftover potatoes and some red wine.

Hubby just had some cherry cheesecake and I'll have mine in a short while.

I don't feel up to cooking so I have some buffalo chicken bites in the freezer, that will have to do.

I made a batch of vegetable soup, and it's nearly ready. It's a good day for soup, as it is -16ÃÂº right now.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Raven, simple meal, I like it! Kittie, that is nice that he cooked. Well I made huge buns, they spread for some reason, so made huge patties..cooked them on the Foreman, after some onion slices and bacon..then loaded up with tomato and lettuce..so that was it..no sides...just mondo burgers. Oh product alert..Kraft slices, White Cheddar Habanero Cheese..really quite tasty not hot at all..just spicy..never noticed them before..and I buy a lot of sliced cheeses..so I'm not sure if it's new or Safeway just started carrying it. But I highly recommend..for a little flavor punch.

It has been another full and busy day. I fixed food to go with grilled hot dogs and hamburgers and we took it all to Amber and Mike's. I took corn on the cob, baked beans, fried potatoes, coleslaw, a cake and the meats. Awhile after eating we came home with Cheryl, Kevin and Alyssa. I have been outside all day since our dinner. My supper was just a fried egg, buttered toast and hot tea. It was a late supper for me. May have bad weather move in tonight. I hope your hubby does well Sherry. Will add him to my prayers. Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

I cooked a small roast beef, then added a lot of vegetables.

It rained almost all day here in OH w/temps in mid 30s.

I had a Marie Callender chicken pot pie and ate the whole thing :-) Didn't taste quite right, but it sure filled me up. Took a nap after that and just got up again!

Everyone sure is having wonderful meals tonight. Yum to you all!

Going for a PET scan at 7 in the morning--wish me luck!!

We had French onion soup, grilled ham and cheese sandwiches and half an apple each. We bought a container of Edy's Christmas peppermint ice cream last week; we may have a small dish before bed.

Patti, we will all be with you tomorrow!

Today is DH's b'day so took him out for lunch and we are both still full. I had planned on grilling scallops for dinner, but not sure that will happen now. We had also planned to see a movie at 10:30pm. Plus I have a birthday cake for him. I will let him figure it all out!

Good luck Patti, we will all be there with you.

Mike grilled pork chops while I made up some Stove Top Stuffing, heated up a can of corn and added applesauce to finish up our menu. It all tasted very good, love that cinnamon applesauce.

We had country style pork ribs (one of DS' favorites) mac & cheese & corn on the cob...there is cheesecake in the fridge for dessert.

I had ground beef needing cooked..so browned that and made taco meat..boys had soft tacos..I had one too..
Hubby had the last of rib roast..some fried cabbage and au gratin taters..

I really want a pot pie!
