Dinner, Sunday Night

On a whim, we bought a 12-piece breaded chicken tenders, a box of potato wedges and pound of coleslaw last nite. One of our grocery stores had this meal for $5 off ($13.99).

We had our meal last nite and for tonight's dinner I made chicken parmesan with 4 of the tenders along with a side of spaghetti, It was delicious. We'll use the remaining tenders as chicken on a bun perhaps.

We had soup and bread. We made the beef soup yesterday and surprised ourselves with how good it was. We have enough to freeze some and give some to my sister.

Sue, thanks for posting these. All are beautiful and what fun to see your pics from the same day and almost the same time. You saw things to frame a bit different than I did and that was really fun to see. I think sometime we need to have all the Idyllers present at some function or other and have everyone take photogaphs so we can all see everyone's 'view'. I also loved the narrative. I still can't believe we did all that driving in just three days! I really love your shots of the shade and vegetable gardens. It was a bit too dark to photo down on the flats when I was outside so I never was able to get a photograph of what was my favorite garden too. I'm tickled you got the pics of the kitties. For some reason I never got around to snapping photos of the furbies. I had a good laugh again when I saw Minou in your bag. She kept climbing into our suitcases as well. OK I guess I've got to get outside and get things watered so I can get off to work. I do not know how the heck you keep up with all you do with a full time job. I can hardly get home and get dinner on the table let alone take care of the gardens and exercise. Teaching a class for eight hours wipes me out. Deanne

Well actually, I don't usually do the salt water with home-grown eggplants as I find they do not have the bitterness at all. Much better that way than store bought. Looks like my dinner plans have changed so I went ahead and froze all the eggplant now anyway (shrugs). Thanks for the input. ANn

Chocolate fondue recipe & dippers??

I was recently invited to a friend's home for dinner and she served fondue for dessert. It was so easy! She just melted plain old dark chocolate (I think it was Hershey's special dark) by breaking it into pieces, putting it in the ceramic fondue pot, then nuking it at intervals of 12 seconds, I think on high. We'd give it a stir and nuke it until it was smooth. She added water, a tablespoon or so at a time, stirred, nuked. We did start eating it only to find it needed more melting and thinning as it was pretty thick on the fruit. We just put some more water in, nuked and stirred a few more times. We ate it with whole fresh strawberries, green and red grapes, cantaloupe and watermelon, chopped fresh pineapple and, oddly enough, dates. The best part besides the strawberries were the dates. They were deglet noor dates which I like less than medjool dates but I think they worked best because they were smaller and not as sweet, allowing the chocolate to be the sweetest part. had made mini meatloafs, so popped 2 out and now have enough for meatloaf sammies tomorrow...finished up green bean cass, and mashed p's....

Everything sounds so good. I loved my meal, but the lingering odor..... I had ham, potatoes, and cabbage. Finished off with applesauce.

Well if you haven't read my what are the chances post, I will just say that although I was not supposed to eat anything, I ended up being able to eat some orange chicken.

Lots of soups happening tonight.
No different here.
I cooked the bones of our Christmas turkey breast with lots of veg.
Strained and picked meat.
Made Turkey Noodle Soup.
I have 2 quarts left.
I also baked a focaccia and so we had turkey sammies on that.
It was an awesome and filling meal.

Homemade chicken noodle soup here, too. I've been roasting the vegetables for about 20 minutes before adding them. Husband can't stop talking about how much flavor it adds. Will try to remember to do that from now on.

Angelaid, you are so right about roasting. It adds so darned much flavor to all kinds of veggies. I made creamy cauliflower soup the other day, a favorite of ours, only I roasted the cauliflower first. It tasted like a different soup!
