Need an Egg & Cheese Croisant Sandwich recipe quickly

I am so sorry to ask for your time so close to Christmas. We were at a brunch yesterday and this restaurant was serving an egg & cheese croissant sandwich. (they were being kept hot in a pan sitting on one of those buffet warmer thingys). The egg was so fluffy almost creamy but completely set.. They had to have been made in a large sheet pan and when the eggs were set they were cut into squares and placed on the croissant. The cheese in the sandwich was also very good and placed on the egg before the top of the croissant was put into place. The egg square was about 1/2 inch in depth. I am not sure if they were in the oven after assembly??? That's all I can think to tell you. Does this sound familiar to anyone? I wouldn't know where to begin.
