I've had spaghetti sauce with meatballs simmering on the stove all day. I think we'll have meatball sandwiches.

Leftovers from yesterday's meal which was requested by a granddaughter just graduated from Navy bootcamp who is home for a short time. She asked for (all starches other than the meatloaf) meat loaf, mashed potatoes, macaroni and cheese, sweet potatoes, carrots, and cornbread. I did add one green which was a green pepper salad.

Every bite was delicious!

Friend had Catfish with Red Beans & Rice and she really enjoyed hers.

I'm thinking scrambled eggs and sausage but I'm so tired it'll probably be PB&J.

I made a pot of gumbo with fresh smoked sausage and smoked tasso and a bunch of shrimp. It's smelling wonderful.

Leftovers - prime tenderloin roast (gently re-heated), boiled red creamers tossed in butter and parsley, steamed broccoli and warmed over apple pie.

Wait,,,,,,McDonald's has chicken noodle soup?

It has been almost 2 years since I've eaten at McDonald's though, so much could change. :)

Reheated wings and gyoza from Christmas Eve for hubby. Leftover mashed taters, half a sweet tater and turkey with gravy from yesterday for me. Grilled 2 cheese and deli turkey sammie for Kam. Kellan has gyoza if he'd like, but I think he's full from eating more homemade pizza rolls I made for lunch today.

Walnutcreek: I'd love the same meal. Your granddaughter has good tastes in foods.

Raven: Had to look up tasso. The dish sounds very good, filled with lots of protein foods, which I'd definitely like.

Terri: I think leftovers are great. Good cooking enjoyed at least twice. Not all McDonalds has soup, and they're only available in the winter months. There are 3: chicken noodle, broccoli cheese, and vegetable beef. We don't have the beef here in my part of Ohio.

I'm visiting my wife's family in Maine, there were eight of us tonight and more are on the way over the next few days. Another brother-in-law and I were nominated to be in charge of all the cooking. He wanted to make something special tonight for his son's birthday and he and I were making various suggestions, none of which were hitting the mark, until I suggested lobster mac and cheese.

I assumed that Eric would be cooking it since it was his son's birthday, and since he's generally a better cook than me, but as we were getting ready to go shopping he said well I've never made lobster mac and cheese so you are in charge tonight. I read a few recipes, and set off for the store, bought various ingredients, came home read a few more recipes, and started cooking. I also made steamed broccoli, warmed a loaf of bread, and made a salad with my father-in-law's homemade vinaigrette.

The result was fantastic.

As best as I can remember the following was the as-cooked recipe.

Lobster Mac and Cheese

serves 10

1 1/2 lb fresh cooked lobster meat (chopped)
1 1/2 lb campanelle pasta
8 oz Vermont sharp cheddar (grated fine)
8 oz Fontina cheese (grated fine)
8 oz Creme Fraiche
1 cup whole milk
1/4 cup wondera flour
1/8 tsp cayenne pepper
1/2 tsp white pepper
1 Tbsp dijon mustard
1 1/2 shallots (chopped fine)
1 stick butter
8 crimini mushrooms (sliced thin)
1 clove garlic (crushed)
1/4 cup Panko bread crumbs
1 1/2 cup of pinot grigio wine

pre-heat oven to 350 deg F

boil large pot of water, add pasta, cook until al dente.

cut larger pieces of lobster into 1/2 pieces.

melt butter in large pan. add shallots, mushrooms and garlic, dijon mustard, cayenne pepper, and white pepper. Cook until shallots and mushrooms are softened.

Add flour and stir until flour is absorbed into the butter. Add milk, and stir until the sauce thickens. Add 1 cup of wine, creme fraiche and stir the creme fraiche into the sauce.

Add the cheeses 1 handful at a time, stirring until it is melted, and then adding more. If the sauce becomes too thick, add more of the white wine.

Place drained noodles in large baking dish. Add sauce and lobster meat. Stir gently until well mixed, top with bread crumbs.

Bake at 350 for about 15-20 minutes until the sauce is bubbling and the tops are lightly gold. Serve.

We were invited to our SIL for homemade lasagna. I brought a Caesar salad with homemade croutons a homemade dressing using up the last of our blue cheese.

I didn't know McD's served soups. Interesting.

Everyone's meals sound sooo good! We had a frozen pizza with extra cheese on top. DH is shampooing the carpets, and I am preping to cook for friends tomorrow. It'll be nice to have a clean house, bellies full of homemade foods, and great company.

Robert went fishing with a couple of friends and they came back with the proverbial 'passel' of fish. They decided no time like the present for a fish fry, lol. All of a sudden, I had six for dinner since their wives were called and everybody was up for a spontaneous get together. And I do mean spontaneous.

I threw some potatoes in the oven to bake, whipped up a big batch of slaw, made some tartar sauce, bought some rolls, and called it supper. We have a deep fryer that can be plugged in outside, thank goodness. The others brought a mac and cheese casserole left over from their dinner yesterday, cookies, pie, homemade pickles, wine, beer, and hard cider.

The fish were great in a light flour/cornmeal/panko breading.......plain and simple. The leftovers will make a great breakfast!

Ah, I would have eaten better at any one of your homes. We did a luau Friday night at the Grand Wailea, and while there were many dishes from which to partake, it was -- you know -- buffet food. (The drinks and desserts were good, and the setting was gorgeous -- oceanfront with a beautiful sunset, followed by moon and stars.)

HOWEVER y'all probably didn't enjoy an hour of hula, culminating with a fire dancer. DGD got right up on the stage to 'learn the hula'. She was the youngest (almost four) and was loving the limelight.
