What's for Dinner ... Friday?

There's a cold, drizzly rain going on here right now. Supposed to get a fair amount of rain over today and tomorrow. Wish I had a fire place to sit in front of right now.

I will just be having a Stouffer's entree in a little while. Salisbury steak w/mac/cheese.

What will be or was on your plate for your main meal?

Not much just had some ginger ale, stomach flu since Wed. evening, not a good thing. Other family members have it too.

Logan's Steakhouse with friend: steak, sauteed mushrooms and salad. I'm satisfied :o)

I had an enjoyable husband-less evening last night. He went night fishing with a buddy; left around five and returned after eleven. I collected some garden veggies and made a quick stir fry with some thawed frozen shrimp, garlic, and ginger. Plus a nice glass of wine, long gab sessions with family and friends, Orange is the New Black binging, and I was a happy camper for a few hours, lol. He sent me text videos of the water, of fish they caught (and released), of bats swooshing around the boat lights, of the sunset, and even of their hilarious banter. So I had a great evening!

Hi Shirley, we are at a bar getting set up to play. Before we left I marinated a couple of chicken breast in olive oil lemon juice, dijon and garlic and herbs and put them on the little gril. We had quinoa salad and fresh rolls. We're in for hot humid temperatures this week end.

Just made some Caesar salad dressing and topped the salad with blackened salmon for DH. I was too tired to eat myself. Maybe in a little bit. Returned home from a golfing trip with the ladies….3 days of golf and late nights. Took one day off except for Mexican train last night and played golf today. Looking forward to a quiet weekend.

I love Cornflakes, but not Kellogg's. Compliments brand (a store brand). Tonite was the first time I've felt like eating anything substantial since I was sick, on Wed. All I had yesterday was a bowl of cream of wheat. I cooked some potatoes, heated a can of creamed corn, fried some onions and had the other hamburger patties. It was all great, except the potatoes had zip flavour. We bought them last week at a roadside stand that sells vegetables. They were supposed to be Yukon Gold, and they weren't, either. The last bag of potatoes we bought were from our store, new potatoes and they had incredible flavour. Very, very disappointed, in the local potatoes. I'll use them strictly for home-fries and oven fries where they can be spiced up to add flavour.

It's a dreary day here again but it's 75 so much warmer. Extremely humid!

Tonight I am making a tamales casserole.
I buy the pre-made tamales at Costco, they are very good and very large.
I unwrap them put them in a sprayed 8x8 glass casserole dish, I spread chili over the top (home made or canned which ever I have) sprinkle on a small can of drained sliced black olives, a drained small can of mexi corn, drained black beans are optional, then top it with a big pile of grated Mexican blend cheese, or your favorite. Sometimes I used to white queso cheese. It's all good. Heat at 375 for 45 minutes or so until it's all bubbly, hot, and melted. I serve it will tortilla chips and salsa, sour cream, and diced avocado, diced tomatoes when available.
Extremely easy and yummy.

I've just put a chicken in the oven to roast, along with some sweet potatoes and carrots. Probably make some green beans almondine, too. Never got around to it for T'giving.

Rhizo, I was surprised to read that you're having a roast chicken, I'm glad you explained it.

We just had hotdogs and mixed veggies and some chips.

Homemade chicken noodle soup. Cold and icy out there today. Husband works in construction, he will be happy to come home to a big pot of homemade chicken noodle soup.

Jasdip: My 3 favorite ways to eat a hotdog: 1. chopped up in pork n beans. 2. coney 3. just plain with or without a bun... maybe a few onions and mustard.

Angela: I'll bet your husband was happy to have such a meal being placed in front of him. I know I would be.
