Advice on making Toffee please...

Hi Kids,

I have become interested in making some toffee. I've never made it but would love to give it a go. Any good recipies out there I should try? Any pitfalls I should watch out for? I have limited experience at making candy but I thought it would be a fun project to make with my youngest 'little girl' (27 and a grad student) when she is home for Christmas.

Thanks in advance for any advice you can give.

DS learned to make toffee in college. He lived in a co op, so every time he made it for everyone, he got credit towards his hours. Very good.

I just remember my mom warning not to make candies when it is raining.

Your plan to spend more time getting the area ready sounds very reasonable. Even if you don't add a bunch of 'dirt' or amendments, by making sure the weeds you pulled are dead (and not going to grow back from the roots as some plants can,) you can expect a much easier time after you do start to put desirable plants there. Weeding never ends, the wind blows seeds, and birds and squirrels move them around constantly, but once you get things under control, it should be very easy to notice wayward sprouts in such a small spot and pull them while they are still infants and come up easily. Since there are tree roots there, I might not add anything but some mulch. That helps moderate moisture levels, in both times of drought and pouring rains. It also makes it harder for many unwanted sprouts to even get going, and easier to pull if they do. An organic mulch that decomposes over time will also add a measure of fertility to the soil, as well as improving the texture. Leaves make a fine mulch, though the cost of a couple bags of store-bought shredded wood (not painted, or with anything added,) would be reasonable for that small area and always looks fantastic, 'finished.' You could sit the pots there on top of the mulch while you're waiting to see if any of those roots keep growing unwanted plants. When planting around tree roots, I don't try to cut through the big ones you described, though doing that to a few in such a small area won't hurt the tree (or shrub) if you need to cut some to be able to use the space. Cutting them a double-edged sword, since it will usually cause many more roots to grow from the end that's still connected to the tree or shrub. When planting perennials (plants that come back after winter,) it's not as much of an issue as it is in a spot where you want to be able to dig holes for annuals (plants killed over winter) annually. A happy medium where annuals are preferred might be planting some seeds, which can find their own way around the tree roots. The seeds sold at seed racks are mostly fast-growing annuals that reliably have time to make flowers well before danger of frost (assuming they are sown when/as directed,) hence their enduring popularity. I've never tried what you are suggesting, but, I would blanch them to try and knock down anything they may be carrying (mold/yeast/bacteria) just in case, and I would at least cut them in half. From making beer, I know that while nothing deadly will grow in the bottle due to the alcohol, you can still get some infections that will taste like crap.

What kind of mold you use is really a matter of preference, metal, plastic etc. Or you can use things you have around the house like yogurt containers. The type of wick will depend on the type of wax, size of the candle or if it's a container candle. I'd suggest getting a few books on candle making and reading up on it more. There's nothing more frustrating than making a candle and not having it come out or burn right.

The most valuable prep space is between the sink and range, and you should have a minimum of 36", but--42-48" would be better. I agree with anniebird, about the sink on the island, and if you have only one sink, then put the DW to the right (as you face the island), so that it is not between the fridge and range. In that layout a helper can load or unload the DW, or gather dishes to set the table, without interfering in prep and cooking tasks. If you really don't want a sink on the island, you might consider making the island 8' (which will still accommodate 4 seats), and putting the clean-up sink on the left wall. You might need to move the door down, but when you build the DR addition, you could make the window a pass-through, and dishes would be convenient to the new DR, in drawers on the end of the island, and in the corner susan or in drawers next to it. The clean-up sink as drawn could then be a prep sink, centered on the right window section, to give you more prep space between it and the range. A trash pull-out under the prep space would be convenient, and the clean-up sink could have a smaller trash pull-out below. Click to enlarge: Good kitchen planning info: New to Kitchens? Here's the recipe I use. It's all gone now thank goodness!!!
I've made a batch of it before when I needed toffee chips..just don't add nuts or chocolate layer...Works perfectly!

Almond Butter Crunch~Betty Crocker
1 c sugar
1 c butter
2 T water
1 T corn syrup
3/4 c toasted chopped almonds
1/2 c chocolate chips
butter square pan 9X9. Heat sugar, butter, water and corn syrup to boiling in heavy saucepan over medium heat, stirring constantly. Cook, stirring constantly, to 290F about 12-15 minutes (mixture will be light brown and thickened); remove from heat.
Stir in almonds (I like to actually chop or grate the almonds on top of the chocolate.). Spread evenly in pan. sprinkle with chocolate chips. cover until chocolate is softened, 1-2 minutes; carefully spread over candy. Let stand at room temp until chocolate is firm, about 3 hours. Loosen candy from sides of pan; remove from pan. Break candy into pieces with knife. Cover and refrigerate any remaining candy.

OK, here is a recipe for toffee that has a secret ingredient and is amazingly good! No need for candy thermometers or a need to worry about the humidity:

1 sleeve saltine crackers
1 c. butter
1/2 c. sugar
12 oz chocolate chips
Garnish with chopped walnuts
(optional)

Line a 15X10 baking pan (like a jelly roll pan with sides) with foil; cover with a single layer of crackers.
Melt butter and sugar in a saucepan; boil for 2 minutes.
Pour over crackers; bake at 350 degrees for 10 minutes.
Sprinkle chocolate chips on top; spread when melted. Add chopped
walnuts if desired. Refrigerate until cooled; break into pieces and store in
an airtight container.

I tried to make toffee when I was a teenager. It was a lot of work, you need a special candy thermometer, and it didn't even taste good. I'll buy toffee instead!

Almond Toffee with Chocolate topping is DH's favorite, and his only "must have" request every Christmas. I have to hide it in order for there to be any left by Christmas!! lol

Almond Toffee Crunch
1 cup finely chopped toasted almonds
***to toast almonds put in pan in 350degree oven for 5 to 10 minutes stirring once or twice til golden brown***
1 1/2 cups sugar
1/3 cup light corn syrup
1/4cup water
1 cup margarine
1/4 teaspoon soda
1/4 teaspoon salt
1 pkg milk chocolate chips

In heavy 2 qt saucepan stir together sugar, syrup, water. Stirring constantly cook over medium heat until it comes to a boil.Cover,cook 1 minute. Stir in margarine til melted. Stirring constantly continue cooking until 290 degrees. Remove from heat. Stir in soda, salt and almonds til blended. Pour immediately into ungreased 10x15 pan. Spread quickly!! (I use a silicone spatula,its a little easier to smooth out)
Cool 5 minutes. Sprinkle choc pieces over and let sit. When melted, spread over toffee. Break into pieces when cooled. Makes 2 lbs.

When I was in high school I think I made it with this
1 c sugar
1 c butter
2 T water
stir cook till hard drop in water then pour and then put two Hersey bars on top to melt.

Hi Kids,

Thanks for all your help and suggestions. Lots of good info here! I have everything on hand and at the ready. If we can carve out some time my daughter and I will give it a go. Yummm...I love toffee!
